Ingredients:
For the Dough:
Whole wheat flour
Water
Salt
Oil (for kneading)
For the Filling:
Boiled and mashed potatoes
Green chilies (finely chopped)
Ginger (grated)
Cumin powder
Coriander powder
Red chili powder
Garam masala
Chaat masala (optional)
Fresh coriander (chopped)

Oil or ghee (for cooking)
Preparation:
Make the Dough: Mix whole wheat flour, salt, and oil with water to form a soft and pliable dough. Knead well and let it rest for at least 30 minutes.
Prepare the Filling: Stir in mashed potatoes mixed with chopped green chilies, grated ginger, and all spices. Stir well until all the ingredients are well integrated.
Assemble and Cook:
Roll small portions of dough into thin circles.
Place a spoonful of the potato filling in the center.
Fold the dough over the filling, sealing all edges tight.
Roll the stuffed dough into a paratha.
Prepare a tawa (griddle) on medium heat.
Fry the paratha on both sides until golden and crispy, adding ghee or oil as required.
Serve: Paratha aloo is best eaten hot with some butter or ghee, curd, achaar or chutney.
