Whole wheat flour

Til- sesame seeds

Gul - jaggery

Ghee-clarified butter

Cardamom powder

Preparation

Dough: A soft dough is prepared from whole wheat flour and water.

Filling: Sesame seeds are roasted till fragrant. Then, they are grounded into a fine powder. Grated jaggery and cardamom powder are added to it.

Rolling and Filling: Small pieces of dough are rolled into very thin circles. A spoonful of the filling is put in the center, folded over, and the edges sealed tightly.

Cooking: The stuffed flatbreads are cooked on a tawa or griddle with medium heat by applying ghee on both sides until they are golden brown and cooked through.

It is usually served hot with ghee. It is mostly accompanied by Tilgul, another sweet prepared from sesame seeds and jaggery.


Cultural Significance:


Makar Sankranti: It is a very important part of Makar Sankranti celebrations in Maharashtra. It is believed to bring good luck and prosperity.

"Tilgul ghya ani god god bola": This phrase, meaning "Accept Tilgul and speak sweetly," is usually exchanged along with Tilgul Poli during the festival.

The festival Tilgul Poli signifies merriment, bonding, and the delightfulness of life; therefore, this sweet has gained a prominent position in the food cultures of Maharashtrians.
